Crispy Tilapia Cakes

Ingredients
1 lb. tilapia fillets1 egg1 medium potato2 TBS. grated parmesan1/2 tsp. onion powder1/4 tsp. salt1/2 tsp. italian seasoning.5 cup panko bread crumbs4 TBS. olive oil
Directions
Peel, cube, and boil the potato until soft. Leaving the water in the pot, use a slotted spoon to get the potato out and put it in a bowl. Mash potato with salt. In potato water, add fish filets and cook for 5 minutes. Add fish filets (you can also use cod) to potato and mash together. Cool for a couple of minutes and add cheese, italian seasoning, onion powder, and lightly beaten egg (you can use 2 egg whites instead of 1 whole egg) and mix thoroughly.

Make 2 inch patties with the fish mixture and coat with panko.

In a saute pan, heat olive oil over medium-high heat. Fry fish cakes until golden brown and delicious.

    This was very good. I did "dress" it up a bit. I chopped 1/2 a small onion (fine) and added a touch of the potato water to make it a little moister. My kids loved it as well. - 7/21/10
