Ingredients
7.5 ounce Hodgson Mill Whole Grain Cornbread And Muffin Mix1/4 cup of Eggbeaters1/2 cup canned pumpkin1/2 cup skim milkNon-stick cooking spray
Directions
Preheat the oven to 400 degrees.

In a small bowl mix all ingredients together with a spatula. Spoon into a 24-cup mini muffin pan sprayed with non-stick cooking spray. Bake for about 12 minutes, muffins will be firm to the touch.
