Tuna Melt on English Muffin

Ingredients
2 english muffins, split in half1 can of tuna packed in water and drained2 tbsp of no-fat mayonnaise1 tbsp of drained capers, diced (optional)1 tsp of dill weed1 tsp of freshly cracked pepper1 tsp of paprika2 slices of 2% (reduced fat) swiss
Directions
Preheat oven to 350 degrees.

Makes two servings.

After the tuna is drained, combine it with the mayonnaise. Dice the capers to taste and add to the tuna mixture along with the spices. Spread half of the tuna mixture on to two english muffin halves. On the remaining halves, place a single piece of the cheese.

Put both english muffin pieces on a cookie sheet or on tin foil and bake for 10 minutes.

Notes - Honestly, half of this mixture is -too- much for me on my muffin, so I usually go a bit lighter and save the leftovers. Also, I never measure seasonings. I go by taste, so quite probably sometimes I have a bit more paprika or a bit more dill weed than other times. Use what tastes good to you.
