Guy's Baba Ganoush

1 Large (or 2 medium) Eggplant 1/2 Garlic Clove 1/8 Cup Tahini 1/8 Cup Lemon Juice 3 Tbsp Vegenaise 1/2 Tsp Liquid Smoke 1/2 Tsp Cumin 1/4 Tsp Salt 1 1/3 Tbsp Olive Oil
Pierce eggplant with a fork and place on baking sheet.
Roast the eggplant at 400° for at least 45 minutes.
Plunge eggplant into an icewater bath. Peel skin off.
Place eggplant meat, garlic, tahini, lemon juice, vegenaise, and liquid smoke in an electric blender (use lowest setting)
and blend well. Transfer mixture to a mixing bowl, and slowly mix in olive oil, cumin, and salt.
Refrigerate for 3 hours before serving.
Makes about 10 1/4 cup servings. Serve with a cut veggie tray and or Pita bread/chips
