Panko Oven Fried Chicken Thigh

935g (8) Boneless Skinless Chicken Thighs 2 Eggs2 T Chicken Rub4 T Lime JuicePam cooking spray Butter Flavored1 1/2 C Panko Breadcrumbs30g Kraft Grated Parmesan Cheese1 T Onion Powder1 T Garlic Powder2 tsp Paprika2 tsp Black Pepper2 tsp Oregano
Preheat oven to 375 degrees Fahrenheit.
Rinse CHICKEN
Spray a baking pan with the COOKING SPRAY.
Place CHICKEN in a mixing bowl and add Lime Juice, Chicken Rub and Eggs. set aside (can marinate in fridge overnight)
In a large ziplock bag combine all dry ingredients (Panko, Grated Cheese, Onion Powder, Garlic Powder, Paprika, Pepper, and Oregano.)
Remove CHICKEN from the Egg Mixture, place in the ziplock bag and coat with the Dry Mixture.
Place the Coated Chicken in baking pan. (I line mine with a silicone liner) Lightly spray the Coated Chicken with Pam.
Bake for 45 minutes.
Makes 8 servings (1 piece each).

Very good! I altered a little due to time and taste. I used fresh chicken breast cut into strips and made tenders. I didn't use the lime or poultry season. I used egg whites and added the cut chicken breast to the egg white, let it sit for just a few minutes then coated with the dry ingredients as t - 8/27/11
