Ingredients
Eggplant, fresh, 170 grams Ground beef, lean 3-7% fat, 170 grams Onions, raw, 125 grams Yogurt, plain, low fat, 125 grams Tomatoes, red, ripe, canned, whole, no salt added, 1 can Garlic, 3 cloves crushedParsley, 3 sprigs Balsamic Vinegar, 0.5 tbsp
Directions
Fry the beef mince, finted chopped onion and balsamic vinegar.. Until beef and onion are soft- lay to one side..
Gently boil the tinned tomatoes, 1½ garlic cloves plus salt and pepper optional not a must for 10 minutes..
Eggplant slices thin and browns on a dry telfon pan until browned. In layers in a oven safe dish a slice of eggplant, beef, and sauce until the ingredients are all used up in the dish..
Taste the yogurt with the 1½ cloves of garlic crushed, (salt and pepper optional) and pour it over the dish...
Put in the oven at a moderately hot oven 400oF... for 30 minutes Serve with a drop of yogurt mix and fine chopped parsley...
