Spaghetti Squash Bake w/ground turkey

1 package (19oz) extra lean ground turkey breast6 cups cooked spaghetti squash strands1 cup chopped sweet onion1 1/2 cup chopped yellow bell pepper3/4 cup chopped red bell pepper2 cups chopped zucchini w/skin1 cup chopped yellow summer squash w/skin 3 tsp minced garlic cloves1 tsp crushed red pepper2 tbs granulated sugar3 cups (1 can) crushed tomatoes - Italian recipe2 cups shredded mozzarella cheese1/2 cup freshly shredded Italian 3 cheese (asiago, parmesean, romano)
Pre-heat oven to 375
combine cheeses in small mixing bowl, set aside.
Lightly spray bottom of skillet with olive oil cooking spray. Crumble turkey meat - place in large skillet with chopped onion, bell peppers, zucchini and garlic. Cook over medium heat for about 15 minutes or until turkey is no longer pink. Stir in tomatoes, red pepper and sugar, simmering for another ten minutes.
Mix spaghetti squash with turkey/tomato mixture. Lightly spray 13x9 baking dish with cooking spray. Place 1/2 tomato/squash mixture on the bottom of dish. Sprinkle 1/2 cheese mix evenly on top of tomato/squash mix. Place other half of tomato/squash mix on top of cheese. Sprinkle second half of cheese mix evenly on top.
Bake for about 20-30 minutes at 375 until cheese is bubbly, just turning golden brown on top. Let set for 10 minutes before serving.
