Refried Bean Soup

Ingredients
1 16 oz. can Fat Free Refried Beans*1 cup Canned Yellow Corn1 16 oz. can Chicken Broth*1 16 oz. can Ro-tel Original Tomatoes w/ Green Chilies1 cup Canned Black Beans (drained)8 Tbsp Fat Free Sour Cream
Directions
Mix everything (except sour cream) together into a pot and simmer until heated through, whisking to combined refried beans with the chicken broth. Serve 1 cup servings in bowls and top each with 2 tbsp of Sour Cream.

*Use vegatarian refried beans and vegetable stock to make this soup vegetarian friendly.

    I found how to make "refried beans" without the "fat"
    I drain & rinse the canned beans [red, pinto, black] then mash them in a food processor then add seasoning
    garlic. onion, chili powder, & salsa
    then add the low fat sour cream
    this can be used in a tortilla for an enchilada

    Very quick and easy. From stove to table in about 10 minutes. Topped ours with crushed baked tortillas and about 2 TBSP fat free mexican blend cheese. Will be making this one again! - 7/12/10

    Canned refried beans aren't necessary. I used more beans, then whipped slightly with a stick blender before adding corn. Less fat, tastes just as good. - 6/1/20

    This was great and felt like comfort food! I used spicy Mexican style corn which gave the soup a nice crunch and added an extra can of diced green chiles for more flavor. I also added a bit of cumin because I love spice. Can't wait to eat the leftovers for lunch! - 8/5/14
