Muesli Pecan cookies

Ingredients
1 cup muesli3/4 cup whole wheat flour1/2 teaspoon baking soda1/4 teaspoon salt2 Tablespoons flax meal3/4 cup chopped pecans1/3 cup butter3/4 cup brown sugar2 eggs1 1/2 teaspoons vanilla
Directions
Heat oven to 375 degrees. Mix dry ingredients together. (muesli, flour, soda, salt, flax and pecans.)

Cream butter, eggs, brown sugar and vanilla. Add dry ingredients and mix.

Drop rounded teaspoons full onto lightly sprayed baking sheet. Bake 11-12 minutes until lightly browned. Cool. May freeze extra portions.

    I cut the recipe in 1/2 and made 9 GIANT cookies 150cal each. I made substitutions:
    Omitted flax b/c I had none. Added coconut flakes. Used sliced almonds instead of pecans. Used half brown and half granulated sugar. Added rum and vanilla. 40% marg instead of butter. Turned out GREAT! - 2/16/09

    Muesil-my store has it with the organic foods not cereals. Will kids eat these? Yes, especially if you add raisens or I added chopped apples. The grains alone are a little bland for their taste. - 12/10/08

    I made them today to try a new cookie that had some healthy ingredients. They are good. I think maybe next time I make them I will try adding some dried cranberries or dried cherries. Even with the sugar they are not very sweet. I very mild flavored cookie. I will make again with some additions - 12/20/07
