Applesauce Oatmeal Muffins

Ingredients
1 cup dry old-fashioned oatmeal flakes1 cup unsweetened applesauce1/2 cup skim milk, soy milk, or almond milk2 egg whites2 Tbsp ground flaxseed2 Tbsp + 1 tsp canola oil1 Tbsp baking powder1/2 tsp baking soda1tsp cinnamon1/2 tsp ground nutmeg3/4 cup brown rice flower1/2 cup dried cranberries
Directions
Preheat oven to 375 F. Line or spray muffin tin. Combine oatmeal, applesauce, milk, eggs, flax and oil in medium bowl. In another bowl, combine dry ingredients (for a little extra sweet, add 1/2 cup xylitol), including dried fruit. Stir wet ingredients into dry, until just combined. Fill muffin cups 2/3 full and bake 15 - 20 minutes. Enjoy!
