Sicilian style pasta with sardines

Ingredients
6 oz pasta1 3 3/4-ounce can small sardines packed in olive oil, drained2 tablespoons olive oil4 garlic cloves, chopped1/2 cup dry white wine1 cup vegetable broth2/3 cup chopped Italian parsley2 tb raisins2 tb pine nuts, toasted
Directions
Cook pasta in large pot of boiling salted water.
Meanwhile, heat olive oil in heavy large skillet over medium heat. Add garlic and saute 1 minute. Add wine and broth; increase heat and boil until liquid is reduced by half, stirring occasionally, about 6 minutes. Remove skillet from heat. Mix parsley, raisins, and pine nuts into sauce. Pour 1/3 cup sauce into small bowl and reserve.

Drain pasta. Add to skillet and toss over low heat to coat. Season pasta to taste with salt and pepper.

Divide pasta onto the plates. Top with sardines and the reserved 1/3 cup sauce.

    I added sliced a few sliced green & kalamata olives + some basil & oregano & cayenne pepper to give this a bit more flavor. I used whole wheat pasta too. Really liked it! Rating would be a 5 if the sauce weren't so runny. Next time I'll mix in a little cornstarch. - 6/7/11

    Wonderful! I substituted fresh basil for the parsley! But I don't know why the recipe says to divide between 2 plates and nutrition info says it makes 4 servings. I cooked less (4 ounces total) pasta, used same amount of sauce (drained off some broth, though), and made 2 servings. - 11/15/09
