Fish Fingers

Bread, whole wheat (including toast), 200 grams Egg white, 1 serving *grated lemon rind, 2 tsp Cod (fish), 500 grams
Slice cod into finger size pieces
crumble the bread into crumbs and place in a dish with lemon rind
place egg white in another dish and break up by beating with a folk
take a piece of fish, dip into egg then into breadcrumbs and place on a lined baking tray
repeat with all the pieces and place in a 185 degrees preheated oven for 10-15 and turn and bake a further 5-10 minutes.
Serve with potato wedges, chips or salad.
