Julie's Tuna Apple Salad

Light tuna packed in water, drained (1 large can + 1 small can)4 T Olive Oil Reduced Fat Mayonnaise1 Large Apple (peeled and finely diced)1 T sweet pickle relish
Mix tuna, mayonnaise, apple and relish. I like to use my salsa maker and put the apple in first to chop it into small bits and then add the other ingredients to blend together.
Makes 5 1/2-cup servings.
Serving suggestion: Serve with whole wheat sandwich thins. Split the sandwich thins and put on griddle or skillet over medium heat to warm. Sprinkle a little bit of your favorite cheese on one half. When cheese has melted and bread is crispy, put 1/2 cup of tuna apple salad on the other half. Put both halves together and serve with fruit.
