Vegetarian Goulash

Ingredients
2 cups vegetarian "burger" crumbles1 medium onion, chopped2 tsp olive oil1-15oz can tomatoes2 cloves garlic, crushed2 cups mushrooms1 cup vegetable brothseveral sprigs fresh tarragonsalt and pepper to taste
Directions
Saute' onion in olive oil until it begins to soften.
Add garlic and cook for 1 minute.
Add mushrooms and cook until wilted and give off their liquid.
Add remaining ingredients and bring to a boil.
Reduce heat and simmer, uncovered until desired consistency is reached.

    I'm looking forward to giving this a try! If you can find it, try to use Full Circle Organic Vegetable Broth because it's the lowest sodium content I've found for vegetable broth. - 3/18/09

    This was great. I did end up adding mushrooms, zucchini, an extra can of tomatoes, and a 2 tbsp of red wine and serving over brown rice, but still an excellent recipe. - 4/17/09
