Decadent Peanut Butter Chocolate Chip Cookies with Flax

Ingredients
1 cup all purpose flour1/4 cup ground flax seed1/2 tsp salt3/4 cup butter/marg1/2 cup granulated sugar1/2 cup brown sugar1/2 cup crunchy peanut butter1 egg1 tsp vanilla extract1 cup semi-sweet chocolate chips
Directions
Combine dry ingredients in a small bowl. Beat butter, sugars, and peanut butter until creamy. Beat in egg and vanilla. Gradually beat in flour mixture. Stir in chocolate chips. Drop tablespoons of dough onto ungreased cookie sheets. Press down slightly to flatten into 1 1/2" circles.

Bake in a preheated oven at 375 F for about 8 minutes. Let cookies stand for a couple of minutes once removed from the oven, then transfer to wire racks to cool completely.

Makes about 4 dozen cookies.

These cookies freeze well.

    Made a few mods: Whole Wheat Flour, Golden Flaxmeal, Salt Substitute (Potassium), Smart Balance Buttery Spread, and 100% all-natural PB (unsalted). All-natural PB has less "punch" than hydrogenated PB, so I used 1 Cup. Still killer! - 11/23/09

    Thanks for the feedback - I appreciate your comments. I also make this one with my young children. I think they enjoy making them more than eating them, although I can't say the same for me. :)
