Oven Roasted Vegetables- South Beach Phase 1

Ingredients
1 med zucchini1 med yellow squash1 med red bell pepper1 med yellow bell pepper1 pound asparagus1 red onion3 Tbsp Olive oil1 tsp salt1/2 tsp black pepper
Directions
Heat oven to 450*F. Cut vegetables into bite size pieces. Place all vegetables in a large roasting pan. Drizzle with olive oil and sprinkle with salt and pepper, toss well to coat. Spread evenly in a single layer. Roast for 30 minutes, stirring occasionally, until vegetables are lightly browned and tender.

    While I was making this and dutifully following the recipe I got carried away. I realized could roast lots of vegetables and add whatever I want. So added garlic, italian seasoning. I'm sure it will be great. - 9/1/11
