Meatless Tacos with Vegetable Protein Crumbles

Ingredients
  • 4 cups meatless burger crumbles (like Morningstar Farms or Boca Burger)
  • 1 package taco seasoning
  • 3/4 cup water
  • 2 large tomatoes, diced
  • 2 cups low-fat shredded cheddar cheese
  • shredded romaine lettuce
  • 8 taco shells (or whole wheat tortillas)
Directions
1. Warm meatless burger crumbles in sauté pan. Add water and taco seasoning to meat and bring to a boil. Simmer and stir until desired consistency is reached.



2. Heat taco shells (or tortillas) according to directions on package. Dice tomatoes, shred cheese, and shred lettuce, all to desired amounts.



3. Pour two oz. beef into shell, and top with desired topping.



Makes 8 servings.

    I make my taco's with low fat cheese & ground chicken.I prefer not to use anything in packages, they have so much salt & preservatives. I use the taco mix that comes in a jar next to all the other spices.

    I buy taco shells AND tortilla's and instead of using the cheese in the taco i melt it on the tortilla and wrap it around the hard shell. its so great because you still get the hard shell but not as much of a mess. - 7/29/08

    I've made this before and just love it! I use finely chopped onions, mushrooms and garlic cooked up in a tiny bit of olive oil before cooking up the fake meat with it. Gives it a bit more flavor that the meat loving men in my family love to eat when I make it! - 5/1/08
