Homemade Hard Candy - in the microwave

Ingredients

1/2 cup sugar1/4 cup light corn syrup1/4 tsp. extract or flavoring oilFood coloring (optional)Powdered sugarMold for hard candy (not chocolate)
1. Mix sugar and corn syrup in a microwave-safe glass (or other container). Cover glass with plastic wrap and microwave 1 minute.
2. Remove plastic wrap carefully to avoid steam. Stir and cover with a new piece of plastic wrap. Microwave 1 minute.
3. Remove plastic wrap. Add flavoring, coloring, and stir. Pour into hard candy mold and let cool completely (nutritional info is based on a 90 piece candy mold, yours may differ). Break apart and lightly coat with powdered sugar to keep pieces from sticking.
Note:
If the mixture is too mushy, you may have used too much corn syrup. This will also cause problems removing from mold, try sticking it in the freezer.
This recipe also works with sucker molds. With a deeper mold like this, make sure to lightly oil the mold beforehand. Wrap suckers separately when cool.

My mom has made hard candy at Christmas for as long as I can remember. If you don't have the molds, you can make a little pan out of aluminum foil and coat with (not so healthy) powdered sugar or...(you fill in the blank). Let harden and then put a towel over it and break it with a hammer! - 10/21/09
