Lime Scallops and Orzo, Mayo p. 199

1 pound Orzo uncooked4 fresh dill sprigs1/3 cup chopped fresh dill1 tablespoon Olive Oil1 medium Carrot, grated1 pound bay scallops, raw, or sea scallops cut into 1/2 inch chunks1/2 teaspoon ground pepper1/4 cup Lime Juice1 tablespoon Lime Zest, finely grated2 cloves Garlic, minced
Fill a large pot three-quarters full of water and bring to a boil. Add the orzo and dill sprigs and cook until the orzo is al dente, about 10 minutes, or according to package directions. Remove 1 cup of the cooking water. Drain the orzo and remove and discard the dill sprigs.
Coat a wok with nonstick cooking spray. Add the oil and place over medium-high heat. When hot, add the carrot and stir-fry for 1 minute.
Add the scallops, orzo, and reserved cooking water and cook, stirring frequently, until most of the liquid has evaporated and the scallops are opaque throughout, 4-5 minutes.
Stir in the pepper, chopped dill, lime juice, lime zest, and garlic.
To serve, divide among individual plates.
