1 butternut squash, peeled and cubed1 Tbsp butter2 tsp brown sugar (more or less to taste)salt and pepper to tastedash fresh ground nutmeg (optional)
Boil squash cubes until tender, about 20 minutes. Drain. Mash as you would for potatoes, then add remaining ingredients. Serve hot.

PIDDYCAN
This is basically the squash recipe I have used for years, but I mash it all without the nutmeg, put it into an ovenproof dish and use a fork across the surface to "stripe" it then I sprinkle on the nutmeg and place it in the oven for about 15 minutes. It comes out gorgeous and delicious.
