Vegan Single Serving Protein Brownie with flax, no flour*

6-7 drops stevia liquid1/2 Tbs. whole wheat pastry flour1/2 Tbs garbanzo bean flour (or more ww)1 Tbs. rice protein (I use Jarrow brown rice, vanilla or choco)1 Tbs. good quality unsweetened cocoa1 Tbs. mashed banana1 Tbs. unsweetened vanilla Almond Breeze1/2 - 3/4 tsp. baking powder (I'm poor at measuring)1/4 tsp. vanilladash cinnamon1/4 tsp. chocolate extract (optional)
Preheat toaster oven to 350 F. Grease a single muffin cup and set aside. Mix flour, protein, cocoa, baking powder and a light dash of cinnamon together. Stir in applesauce, non-dairy milk, stevia and a drop or two of vanilla and chocolate extract until combined. Bake 15 to 20 minutes, until a toothpick inserted in the center comes out clean.
