I made this soup and it is very flavorful. I did use low sodium chicken broth and an extra 1/4 cup of wine (and that changes the calories). But, a little goes along way with this soup in satisfying hunger. Plus my non-bean/legume husband tried and really liked it. - 9/15/14

I needed to cook the lentils longer - ate the leftovers on day 2 and it was perfect. I had some leftover eggplant, zucchini and red pepper I also added and it worked. A keeper of a recipe. - 1/27/14

Great soup! Quick and easy. I made it as is except with less water for more of a stew and served with some hot cheese toast. Yum. Also tried mixing in some mashed potatoes when serving, and that was really tasty also. - 9/29/08
