Carrot Cookies

1 c. whole wheat flour1 tsp baking powder1/8 teaspoon salt1 c. rolled oats1/4 c. sunflower seeds (unsalted!) 1/4 c. almond, walnut, or cashew pieces 1/4 c. dried cranberries1 c. shredded carrots1/2 c. agave nectar1/2 c. canola oil1/4 tsp. vanilla extract
1. Pre-heat oven to 375 degrees. Lightly grease cookie sheet with a little canola oil.
2. Mix flour, baking powder, salt, oats, sunflower seeds, nuts, cranberries, and carrots.
3. In a seperate bowl, beat agave, oil, and vanilla.
4. Mix liquid mixture in with flour mixture.
5. Drop small spoonfuls on cookie sheet.
6. Bake for 12 to 15 minutes.
