Bluberry Almond Applesauce Oatmeal Muffins

1 cup, old fashioned oatmeal (not instant)1 cup, skim milk1/2 cup, unsweetened applesauce1/2 cup, egg substitute (like eggbeaters)1 cup, whole wheat flour1/4 cup, splenda brown sugar blend1 tsp, baking powder1/2 tsp, baking soda1/2 tsp, salt1 tsp cinnamon2 tsp, splenda no calorie sweetner1 tbsp diced almonds (optional, but is included in nutritional information)3 tbsp blueberries (optional, but is included in nutritional information)
Soak the oats in the milk for one hour.
Preheat the oven to 400. Spray muffin pan with cooking spray.
Combine the oat mixture with the applesauce and egg substitute, and mix until combined.
In a separate bowl whisk the dry ingredients together (minus blueberries and almonds)
Add wet to dry ingredients and mix until just combined. Add nuts and berries. Do not over mix the batter.
Spoon mixture into muffin pan and bake for 20-25 minutes.
