Quick & Easy Chicken Fried Rice

Ingredients
One whole chicken breast, cut in 1" chunks1 cup white rice (will double when cooked)1 10 oz. package mixed stir-fry frozen vegetables1 Egg1 T Lite Soy Sauce3 Cloves Garlic, mincedDash saltDash pepper1/4 t. ground ginger1/4 t. chilli powder
Directions
Heat olive oil in a skillet or wok, over medium-high heat.

Add chicken and cook until almost cooked through.

Add vegetables and turn heat up to high. Sauté 3-4 minutes, stirring frequently. Season with Salt, pepper, ginger, chilli powder and soy sauce. Add garlic and stir to mix.

Make a hole in the middle of the pan. Whisk together the egg and a tablespoon of water and pour into middle of pan. Stir egg until scrambled and cooked, then mix into the surrounding ingredients. Remove from heat, serve and enjoy!
