Chocolate Truffle Torte (Very Low Sugar/ Low Carb)

Ingredients
CHOCOLATE TRUFFLE TORTE1 bar 85% Dark Chocolate (I use Lindt 85% - 100g)1/2 cup unsalted butter, cut upPinch salt0.5 cup granular Splenda1 tablespoon cocoa, sifted3 eggs2/3 cup heavy cream1 teaspoon vanilla** You can use any chocolate combination you'd like. The higher the cocoa content, the less sugar and carbs.
Directions
In a pot, on the stove top, melt butter and chocolate bar over low heat (take it slow and don't let it bubble)... stirring occasionally. Whisk until completely smooth. In a separate bowl - Whisk salt, sweetener (splenda), cocoa, eggs, cream and vanilla. Add chocolate/butter mixture to other wet ingredients and blend. Once everything is incorporated pour the mixture into a greased (I use pam) 9-inch pie plate.

Bake at 350 degrees for 15 minutes or until the torte has puffed around the edges but the center is almost firm to the touch but still slightly jiggly. Cool completely. Chill well before serving. Serve with sugar free whipped cream and raspberries if desired.
