Zucchini Pie

Ingredients
4 cups zucchini, thinly sliced 1 cup chopped onion 1/4 cup water 2 tbsp. parsley flakes 1/2 tsp pepper 1/4 tsp. each garlic powder, basil and oregano2 eggs, beaten 8 oz. shredded Mozzarella cheese
Directions
Saute zucchini and onion in water for 10 minutes. Drain excess liquid. Combine eggs, cheese, and seasonings. Stir in zucchini mixture. Place in 10 inch pie plate and bake at 375 degrees for 18 to 2o minutes. Makes 4 servings.
