Basa with walnuts - lower carbs

Ingredients
Basa fish, raw, 16 oz Extra Virgin Olive Oil, 1 tbsp 1/2 Onion, Raw ,Medium Size 2.5 oz Parsley, Fresh, .25 cup Walnuts, .125 cup, chopped Salt, 1 dash Pepper, black, 1 dash
Directions
finely chop onion, fresh parsley and walnuts

Heat skillet to medium high heat and cook 2 tbsn chopped walnuts until golden brown. (3- 5 minutes) Move to side and place 1 tbsn extra virgin olive oil and saute 1/2 a medium chopped onion until translucent. (about 5 minutes) move to side. Remove from heat.

Rinse Basa fillets and pat dry with paper towel. Season with salt and pepper. Lay in pan and cook on medium high about 5 minutes then turn fillets over and cook another 5 minutes then cover, and cook over medium heat 6 to 8 minutes or until flesh of fish flakes easily with a fork.

Remove and split into 4 portions about 4 ounces each.

Mix parsley in with onions and walnuts over low heat for about 30 seconds, then sprinkle evenly over the top of the fish and serve. If you wish, squeeze lime over the mixture for added flavor.

This makes 4, 4 ounce portions

    I love basa, it's also known as Vietnamese catfish. I recently started buying it as well and it's a nice large fish, bigger than Tilapia, so it's a bigger fillet. I love to just broil it seasoned with Tony Chachere's, but this recipe looks great. Unfortunately, I'm allergic to tree nuts. - 11/6/10

    I would recommend doing this without the walnuts and add a little balsamic, also delicious!
