Tuna Puffs

Ingredients
MAKES ENOUGH FOR 3.3 cans of tuna in water.2 tbsp of mayo or you can sub low fat mayo.1 large tomato, cut into six slices.3 english muffins, halved; I use sourdough.OPTIONAL: jalepeno peppers.
Directions
~Preheat your toaster oven to 400 degrees.

~Cut the three English muffins in half.

~Mix the tuna and mayo together. Optionally, you can add jalepeno peppers. Pepper to taste. Distribute the tuna mixture evenly on each of the halved English muffins.

~Cut the tomato into six slices. Put one slice on top of the tuna on each of the English muffins.

~Toast them for 10 minutes.

This recipe makes 3 servings, two halved English muffins per serving.
