Light Flax Banana Bread

Ingredients
1/2 cup unsweetened applesauce1/4 cup(approximately 2-3 tbsp) fat free plain yogurt1 cup mashed bananas7 tbsp (about 1/2 cup) ground flax seed1/2 cup natural sugar 2 cups whole wheat flour1/2 tsp salt1/2 tsp baking powder1/2 tsp baking soda
Directions
Cream together the applesauce, eggs, sugar, and yogurt.
Add the flour, salt, baking powder, baking soda, and mashed bananas.
Mix until combined.
Pour into bread pans and bake at 375*F for about a half hour.
Suggestion - do not make the bread too thick or it will not bake thoroughly, make the layer of dough rather thin, and it will be delicious.

    Fantastic! I used 3.5 bananas from the freezer and used brown sugar instead of white. These are delicious! ***Don't forget to add 2 eggs - they are missing from the list but are in the breakdown. I made these into 12 muffins.

    Going off the .17 eggs per serving, the recipe calls for 2 eggs....so at least we know that they are included in the nutritional information. - 4/8/11

    I put in 2 eggs too, and used silicone muffin pans and they came out fine. Maybe I'll add some vanilla next time, or walnuts or (gasp) chocolate chips! - 12/15/09

    Used multi-purpose gluten free flour and added some walnuts this time & used 2 eggs again. As I was making the recipe this time I noticed that the flax seed is not mentioned in the directions (something I had not noticed before) & I added it with the flour. - 10/4/07
