Apple Souffle

9 Large Cortland or Macoun Apples( peeled and sliced)1 stick of salted butter3/4 cup of granulated sugar1/2 tsp salt1 tsp cinnamon9 large eggs1 1/2 cups of white flour1 1/2 cups of milk1/2 cup more granulated sugar (for topping)1/2 tsp cinnamon (for topping)
Saute apples in 4 tablespoons of butter for 10 minutes over medium heat until soft, then add sugar and cinnamon and sugar until juicy.
Put apples in greased 9 x 13 pan.
Mix together salt, eggs, flour and milk and pour over apples. Bake uncovered for twelve minutes.
Add 1/2 cup of cinnamon/sugar topping mixture and dot with remaining 4 tablespoons of butter.
Bake uncovered for 20 more minutes, or until mixture rises to souffle type look (light golden brown mixture--and risen over pan).
Let cool for 5 minutes b/4 cutting.
