Cheesy mashed potatoes and cauliflower

Ingredients
1 lb. red potatoes (cut into chunks)1 cup small cauliflower florets1/4 cup reduced fat sour cream1 cup 2% sharp cheddar shreds
Directions
boil potatoes and cauliflower in water until tender
drain, add sour cream and mash until light and fluffy. Stir in cheese

    This was a great recipe. I used grated Parmesan instead of cheddar and it was delicious. Did need to season a little adding garlic powder and pepper. Thank you. - 2/28/10

    Very tasty. Unfortunately I couldn't find any sharp cheddar so I had to use regular, but instead of reduced fat sour cream I used non fat. Guess that would change the nutritional values somewhat. Everyone in the family loved it, so I guess it's a keeper! Thanks. - 10/25/10
