Tilapia Satchels with Orange Butter Sauce

Ingredients
1/2 Cup Dry White Wine8 fillets (3-4 ounces each)Coarse Salt and Fresh Ground Pepper1 Orange sliced very thin (about 16 slices)1 Orange Juiced (about 4-5 T)3 T cold butter cut into piecesDill Sprigs
Directions
Place the wine in a large lidded skillet. Fold each fillet into thirds or 1/2s. Arrange in the skillet, season with salt and pepper. Lay two overlapping orange slices on each piece of fish. Bring wine to a boil, reduce the heat to med-low. Cover, simmer gently until the fish is opaque throughout (3-5 minutes). With a spatula, transfer fish to serving plates. Return the liquid in the skillet to a boil; cook until reduced to 1/3 cup (1-2 minutes). Add the orange juice, remove from heat. Whisk in the butter until smooth. season with salt, strain, if desired. Serve with the fish, garnish with fresh dill and pepper.
