Ed's Biggest Loser Asian Lettuce Wraps (Made with Lean Ground Beef)

Ingredients
2 pounds extra lean ground beef1 teaspoon vegetable oil1 red bell pepper, diced1 cup celery, chopped1/2 cup sliced waterchestnuts1 cup green onions1 1/2 Tablespoons ginger root, finely grated3 cloves garlic2 Tablespoon Soy Sauce1/2 teaspoon red pepper flakes2/3 cup hoisin sauce1/4 cup sliced almonds
Directions
Saute bell peppers and celery in oil for 2 minutes. Add ground beef, green onions, ginger, red pepper flakes, garlic, and water chestnuts. Stir while cooking for 5 minutes, until beef is no longer pink. Add soy sauce, hoisin sauce, and almonds. Heat thoroughly for 1 minute. Place 1/16 of beef mixture into each lettuce leaf. Roll up tightly and serve immediately.

    Delish! Some of the kids ate them with tortillas, I used romaine hearts; overall pretty good. I understand the recipe to be 1/4 cup filling per serving. - 5/3/11

    My whole family of four loved this. I halved the recipe and used carrots instead of water chestnuts. I skipped the almonds as I didn't have any. I'm sure almonds would only make it better. I bought one head of bibb lettuce and it was not enough. I will definitely make this again! - 7/27/16

    These were wonderful! I made them exactly to the recipe, but I did add a couple more veggies--zucchini and shredded carrots as a topper. We served them in butter lettuce leaves, and I offered rice on the side as well. I will be making this over and over! New favorite!! - 7/27/12

    these are very tasty. The red pepper flakes add just the right amt of heat. And the added bonus of being low carb using the lettuce to wrap it up makes me feel extra virtuous, while still being delicious and satisfying. I've made them twice, will make then many more times. - 2/7/12

    We used 1 can of sliced water chestnuts and added some mushrooms. We all loved this recipe! Next time, we're going to cut out half of the beef and add more peppers and mushrooms.
