* Cod (fish), 5 fillet * Onions, raw, 2 medium (2-1/2" dia) * Red Ripe Tomatoes, 2 medium whole (2-3/5" dia) * Tomato Sauce, 1 cup * Pepper, black, 1 tbsp * Olive Oil, 1 1tsp
In a pan put the diced onion and the oil with 1/2 cup of water in the oven for about 5 minutes. The add the cod fillets, the tomatoes sliced, the tomato sauce, the black pepper and some fish seasoning of choice. add water to cover the fillets. Put back in the oven for about 20-30 min and then check on it. Makes 5 servings. Serves well with backed potatoes.
