Ingredients
White Rice, long grain, 1 cupOnions, raw, 1 medium (2-1/2" dia), choppedGarlic, 2 cloves, chopped2 tsp canola oilCilantro, raw, 1 tbsp, choppedCloves, ground, 1 tspOregano, crushed dried, 2 tspCanned Tomatoes, 2 cup, choppedJalapeno Peppers, .5 cup, chopped w/ seeds removedCumin seed, crushed, .5 tspCooked Chicken Breast, no skin, 2 breast, bone and skin removed, choppedBlack Beans, 1 15-16 oz can, drainedPenzey's Arizona Dreaming seasoning, 1/2 tspSalt, 1 tsp
Directions
Boil the rice in water for 10 minutes; drain. Saute onions and garlic in oil until translucent. Add drained rice and the rest of the ingredients and cook until rice is tender and liquid (from tomatoes) is absorbed.
Serve 1/2 cup / flour tortilla.
Optional: add shredded cheese, sour cream, guacamole, etc.
