Ingredients
1 tbsp. olive oil1 med. onion-chopped1 tbsp minced garlic1 cup chopped mushrooms1/4 cup tomato paste2 tsp. paprika2 tsp. oregano2 tsp.chili powder1 stalk celery-chopped3-15 oz. can beans-1 black-1 red-1 white beans1 cup sliced carrots1-10 oz. can diced tomatoes with green chilies1-14 oz. can diced tomatoes
Directions
Cook olive oil, onions,celery,carrots, mushrooms and garlic. Add ALL of the ingredients in cooker and simmer for 1 hour. Serve with baked corn chips.
