Shrimp Lo Mein

6 oz of dry whole wheat spaghetti, or 3 cups cooked0.5 cup of sliced onion and celery each0.25 to 0.5 cup of frozen peas, thawed0.25 cup of carrot stripsShrimp, peeled, ~ 10 pieces (or more if preferred)canola oilgarlic and ginger, minced/grated if wanted4 Tbsp of Hoisin sauce2 Tbsp of soy sauce1 Tbsp of waterBean sprouts (optional)
Boil water, add some salt and cook pasta.
Drain pasta and rinse with cold water, set aside.
Mix Hoisin sauce, soy sauce and water together. Set aside.
Heat large non-stick pan to med heat.
Add one Tbsp of oil, cook garlic & ginger (if wanted) about 1 min then add shrimp, cook for a couple minutes stirring. Add rest of vegetables and cook for a couple more minutes.
Add pasta, add 1 Tbsp of oil, and mixed sauce, cooke for 1-2 more min.
Remove from heat, toss with bean sprouts.
