Banana Walnut Muffins

Ingredients
4 ripe bananas,mashed1c. light brown sugar, packed1/2 c. canola oil1 lg. egg1/2 c. sour cream1 T. vanilla ext.1 c. all purpose flour1 c. whole wheat pastry flour1 t. baking powder1 t. bking soda1/2 t. salt1/2 c. chopped walnutsprepared streusel topping (optional)
Directions
Preheat to 350

Add wet ingredients and mix thoroughly. In separate bowl, add dry ingredients and whisk together to combine. Add to wet ingredients. Mix thoroughly then hand mix in walnuts. Scoop into greased muffin tin or use liners. Add streusel and bake for 25 minutes. Makes 18 muffins
