Lemon-Pepper Chicken Caesar Salads

¼ cup olive oil1 lb boneless, skinless chicken breast, cut into strips1 ½ tsp lemon-pepper seasoning1 tsp garlic powder2 TBSP white wine vinegar1 tsp Dijon mustard½ tsp Worcestershire sauce1 large head romaine lettuce, torn into bite-size pieces1 cup garlic croutons¼ cup grated parmesan cheese
Heat oil in non-stick skillet over medium-high heat.
Toss chicken with lemon-pepper and garlic powder to evenly coat. Add to skillet and cook 4-5 minutes, until thoroughly cooked, stirring frequently. Remove from heat. Do NOT drain off the oil.
In a small bowl, combine vinegar, mustard, and Worcestershire with a whisk. Stir into chicken/oil mixture.
In a large bowl, toss lettuce with chicken mixture, croutons, and cheese.

Tried this recipe tonight & I didn't care for it! My wife liked it, but I think it had way too much lemon pepper. I wouldn't even use L/P if I made this again. I would just increase the garlic powder while frying the chicken. All I could taste was lemon pepper when eating the chicken. - 4/12/12
