Gluten - Free Carrot-Coconut Macaroons

Ingredients
1 large carrot, coarsely grated¼ cup fresh-squeezed orange juice¼ cup almond butter, stirred well and heated until soft1 tbsp soft coconut palm sugar2 tbsp non-hydrogenated margarine2 cups shredded, unsweetened coconut 1/3 cup brown rice flour1/3 cup coconut flour½ tsp salt1 tsp fresh-grated ginger1 tbsp maple syrup
Directions
Preheat the oven to 350°F. Lightly grease a cookie sheet.
Mix all the ingredients together in a large bowl.
Roll into 20 balls and bake for 28 minutes. Transfer to a rack to cool.
