Cranberry-Sunflower Seed Mini Muffins

1 cup whole wheat flour1.5 tsp baking powder1/4 tsp each, baking soda, ground cinnamon, and table salt1 egg1/2 cup fat free half and half1/2 cup sugar1/4 cup unsweetened applesauce1/2 tsp vanilla extract1/2 cup dried cranberries1/2 cup hulled, unsalted sunflower seeds
preheat oven to 400. coat a mini muffin pan with nonstick spray.
whisk together flour, baking powder, baking soda, cinnamon, and salt in a bowl. In a separate bowl, whisk together egg, half and half, sugar, applesauce, and vanilla.
Stir wet ingredients into dry ingredients until combined.
Toss cranberries and the sunflower seeds into the batter.
Fill muffin cups 3/4 of the way. Bake until a toothpick inserted comes out clean. Approx 15 mins.
