1 can white albacore tuna, drained1 tbsp light mayonnaise1 tbsp balsamic vinegar3 tbsp chopped onion2 tbsp sliced almonds (use garlic or other flavor, if available)2 tbsp shelled edemame, raw1/2 cup cooked spaghetti squash threads, chilled1 medium tomato, chopped
Mix mayonnaise and vinegar into tuna.
Add onion, almonds, and edemame to mixture and stir.
Mix in spaghetti squash. Chill.
Serve alone or over salad greens, topped with chopped tomato.
