Dad's Power Bars

Ingredients
Directions
½ c brown sugar¾ c Agave nectar11/2 c peanut butter (creamy or chunky)1 tsp vanilla1 c oats (quick or regular)1.25 c crisp brown rice (or rice krispies or cocoa crispies)½ c raisins½ c sunflower seeds½ c slivered almonds½ c pumpkin seeds3/4 c soy nuts1/4 c pecan pieces2 Tbsp sesame seeds4 Tbsp flaxseed ½ c dark chocolate chips ( or more)
Combine dry ingredients in a bowl and set aside. In a large saucepan bring sugar and agave to a boil (only takes a minute or two). Remove from heat. Stir in peanut butter and vanilla. Add the dry ingredients. (Wait until is somewhat cool befor adding the chocolate chips) Spread into a jellyroll pan (lined with parchment paper) and cool. Cut into bars. (pizza cutter works best)
Fruity version:
Omit chocolate chips and soy nuts. Add 1 c diced dried mixed fruit instead.
Notes:
You can use less nectar and sugar; it will turn out more like chunks of granola rather than bars but it is still good. (The sugar/syrup is the “glue” that holds it together.)
