Cashew Nut and Mushroom Pasta

Ingredients
1 tbsp Olive Oil1 medium Onion, chopped 3 cloves Garlic2 tbsp Soy Sauce 2 tbsp Cooking Sherry (dry) 100 grams Button Mushrooms, chopped100 grams Chestnut mushrooms, chopped4 oz Cashew Nuts (Raw) Thyme, fresh, 1 tsp 100 grams low fat crème fraiche
Directions
Gently fry onions and garlic in olive oil until soft.
Add all other ingredients except creme fraiche and stir occasionally until cooked throough.
Stir in creme fraiche and heat gently.
Serve with pasta of your choice
