Coconut Pancakes

Ingredients
3 lrg eggs3.5 T butter4 T half and half1/2 c water (more or less, depending on desired consistency)1 t baking powder1 t vanilla extract1 dash salt1 t honey1/2 c coconut flour
Directions
In a bowl, mix the eggs, 3 T of melted butter, half and half, vanilla extract, and honey. Stir in the baking powder, salt, and coconut flour. Add in the water. Melt the 1/2 T of butter in a frying pan and drop in batter to make 7 pancakes. (I use a soup spoon to measure each pancake.)

Serving Size: makes 7 4 inch pancakes
