Gina's Zesty Lime Shrimp Salad

Ingredients
Shrimp, cooked, 1 poundAvacado- California, 1 serving Red Ripe Tomatoes, .5 medium whole (2-3/5" dia)Jalapeno Peppers, .5 pepper Onions, raw, .25 cup, chopped Lime Juice, 2 lime yieldsOlive Oil, 1 1tsp Cilantro, raw, 1 tbsp Basil, 1 tbsp
Directions
In a small bowl combine red onion, lime juice, olive oil, pinch of salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion.

In a large bowl combine chopped shrimp, avocado, tomato, jalapeņo. Combine all the ingredients together, add cilantro and gently toss. Adjust salt and pepper to taste.

Makes approximately 3-1/2 cups & 4 servings @ 7/8 cups a serving
