Ingredients: 5 Sweet italian sausages/cut if half; 5 hot italian sauge/ cut in half; 1LB pork or beef shortribs in 2pieces; ILB ground lean hamburger; 1LB ground pork; Brown in 2Tbl Olive oil in batches transfer to Large kettle; DRAIN most of the fat off and ADD:; 1 1/2 C large diced onion; 5Large cloves Chopped Garlic; Cook 5 min add to pot; ADD:; 4 28 0z cans roma tomatos (peeled); 1 12 0z can tomato paste; 2Tbl Fresh Oregano (1tbl dried); 1C Fresh chopped Flat Italian Leaf parsley; Zest of 2 Lemons; 1 1/2 tsp fresh ground pepper; salt to taste; Pinch red pepper flakes; pinch sugar; 2 TBL OLIVE OIL; Simmer for 3.5 hrs. serve w/pasta of choice (RIGATONI)
