Ingredients
1 lb. Lean Beef Round, cut into cubes1 medium onion chopped1 medium bell pepper, chopped2 medium garlic cloves, minced (or 1 tsp. jarred minced garlic)2 medium potatoes, peeled and diced24 medium baby carrots, cut lengthwise1 c. Beef Broth, fat free8 oz. Light Beer1/4 c. Milk, fat free2 T. Cornstarch
Directions
Coat a large nonstick skillet with cooking spray and heat over medium-high heat. Add beef onion, peppers and garlic. Cook until beef is browned, stirring occasionally.

Stir in potatoes, carrots, broth and beer. Bring to a boil, reduce heat, cover and simmer until meat and veggies are tender, about 30 mins.

Stir together milk and cornstarch in a small cup. Add to beef mixture and stir to combine. Cook until slightly thickened and bubbly, about 5 mins. Cook, stirring occasionally, for 2 more minutes.

Yields about 1-1/2 cups per serving.

    I would probably tenderize the meat a bit next time. I also would add some salt and pepper while cooking. Maybe some button mushrooms too...it was good though, just needs some tweaking for my family's tastes - 2/5/08

    Yummy! The beer gave this stew wonderful flavor. But I think I overcooked the potatoes, because they got mushy so I will keep that in mind next time. DELICIOUS anyways! Thanks Lynn! Can't wait to try more of your recipes! - 1/24/08
