Coconut Flour ''Primal'' Banana Bread

Ingredients
2-3 ripe, mashed bananas1/3 c butter, melted6 eggs2 tbsp honey1 tsp vanilla1/2 c coconut flour1 tsp baking powder1 tsp baking soda1/2 tsp salt1 tbsp cinnamon1/3 c nuts (optional)
Directions
Combine bananas and melted butter. Mix well. Add eggs, honey, and vanilla and whisk until eggs are combined.

In separate bowl stir together dry ingredients. Add to wet ingredients. Add nuts if using and stir in.

Transfer batter to greased loaf pan and bake at 350 for 45 minutes or until toothpick inserted in middle comes out clean.

Serving Size: makes 1 loaf

    I joined Spark just to rate this recipe. I made muffins and they are fabulous. The family loves them. Based on comments, 350 deg. for 20 min. Made exactly as recipe listed, 3 med. bananas, and no nuts. I'm making a double batch tonight. One recipe makes 12 muffins. - 4/4/13

    I don't know about the rest of the nutrition info - but the sodium on this is WAYY OFF because baking soda and even reduced sodium baking powder, although they are calorie free, they are LOADED with sodium, fyi. - 10/24/12

    I just baked and it's the best bread I ever had. I used coconut oil instead of butter, used flaxseed meal instead of eggs and add cranberries. I baked in a mini bread pan for 350 at 20min. It was perfect. Thank you for this recipe. Kristie - 11/13/13

    I love this recipe. I will sometimes add chia seeds to it, 1/4 cup and I use apple sauce instead of butter. I found it makes it more moist. - 8/22/15

    Just made this today. Left out the baking soda. Not salty at all to me! Not a flavourful as regular banana bread and the eggs give it a very different texture. It did take much longer to bake, more like 90min @ 350 - 3/22/15

    This is a great recipe and easy to make. I made them in muffin tins instead, sprayed with coconut oil. I also added some chopped pecans and walnuts and bittersweet chocolate chips. Baked for 20 minutes at 350 degrees - came out perfect! - 12/31/12

    Good -- nice and moist. Good with cream cheese. Put some parchment in the bottom of the loaf pan to keep from sticking. Be sure to use a large loaf pan -- mine was too small, and took longer to bake because the bread was too high in the pan. - 9/18/12

    Great taste, very moist.(used 3 bananas) The loads of eggs give it a bit of a popover texture. Replaced the honey with 1 Tbsp agave and the butter with coconut oil. Kids liked it the way it is but if making for just me, would add nuts and some flax seeds for texture. - 9/4/12

    Best banana bread ever! And that includes bread made with regular flour. I made it exactly according to the recipe (3 medium bananas) and it was moist, fluffy, firm, and smooth - no graininess at all like some gluten-free breads. Husband loved it! Can't praise this recipe enough! - 6/7/12

    Amazing!!!! I made muffins with the recipe did everything exactly the same, just put in muffin tins and baked for about 20 minutes. I also used carob chips instead of the nuts. Great recipe!

    I made muffins and they turned out tasty. Not at all salty as some have stated, but it could use a bit more sweetness in my opinion. I added 1 T ground flax seeds, 1 T chia seeds and 1 T water to make up for the additional dry ingredients. Sprinkled raw sugar on the tops before baking, yum! - 9/25/15

    I have a question about the measuring on the flour. You said 1/2 Cup is that packed, loose, spooned into the cup, or measured in grams? GF recipes are very specific, and I have found if I don't ask this I get soggy or dense bread. Also, can we add a little Stevia if this is not sweet enough? - 9/17/14

    I tried this bread yesterday & was very, very happy w/the results. I did cut the soda & baking powder down to 1/2 tea, bread still turned out light & fluffy. I have tried other paleo banana bread recipes but they always seemed to turn out mushy, thanks for a great recipe :-) - 5/22/14

    This banana bread was fantastic. Instead of nuts, I added 2 Tbsp of ground flax seed and 3 Tbsp of shredded coconut. The aroma while cooking was devine - wish I had a candle in that scent. The loaf was beautiful when done and tasted even better. Before serving, I sprinkled some coconut sugar on top. - 9/5/13
